Crepes with Apple Sour Cream filling: 3/4 cup all-purpose flour 3/4 cup whole wheat flour 1 tablespoon sugar 1/2 teaspoon baking powder 1/4 teaspoon salt 2 cups low-fat milk 2 eggs, beaten 1 teaspoon vanilla extract 1 tablespoon melted butter Apple Sour Cream Filling: 2 tablespoons butter 3 medium apples, peeled, cored and thinly sliced 2 tablespoons sugar 1 teaspoon vanilla extract 1 cup low-fat sour cream 1/2 teaspoon cinnamon 1/2 teaspoon nutmeg Powdered sugar
Method For crepes: Stir together flours, sugar, baking powder and salt in a bowl. Whisk in remaining ingredients until smooth. For each crepe, lightly oil an 8-inch skillet and heat over medium heat. Pour about 1/4 cup batter into skillet and rotate pan until batter covers bottom. Cook until light brown and turn and brown on other side. For Filling: Melt butter; add apples and saute about 4 minutes. Add sugar and vanilla extract and saute 1 more minute. Stir in sour cream and spices; heat through. To serve: Spoon 1/4 of the apple mixture onto each of 4 crepes, roll up and sprinkle with powdered sugar.
Notes: Pears will also work well instead of apples.
